Microwave Artichokes

Ingredients

  1. 2 globe artichokes, about 8 to 12 ounces each
  2. Melted butter and lemon wedges if you are serving them hot
  3. Vinaigrette or salad dressing, if you are serving them chilled

Instructions

  1. Cut off stem and with a sharp knife trim the base so artichokes sit flat. Make a cut across the top of the leaves, parallel to the base. With scissors, trim the leaves so they have straight edges.
  2. To cook conventionally, bring a large shallow pan of salted water to a boil. Submerge artichokes, cover tops with a heat proof heavy plate to keep them submerged and cook for 35 to 45 minutes or until a leaf in middle can be pulled out easily. Drain them upside down so water runs out.
  3. To cook in microwave, wrap each one individually in microwavable plastic wrap and set them in a round plate. Microwave for 10 minutes or until a center leaf can be pulled out easily. Remove plastic wrap (carefully; it will be hot).
  4. Serve as is, with each person pulling out a leaf and dipping it in melted butter, or remove cone of dinner leaves in one fell swoop and reserve them for later. With a small spoon scoop out choke. Replace cone of leaves, upside down and serve with melted butter seasoned with lemon or vinaigrette.

Delicious & simple. My hubby cut them in half & added a bread crumb & garlic stuffing, crisping them up in the air fryer. So easy to modify to one’s mood or dinner/lunch of the day. SO YUMMY!

 This method really works and makes it so quick and easy to serve a beautifully done and tasty artichoke. I’m now able to add them as an appetizer much more often than in the past.

When I serve artichokes at a dinner party, I aways have at least one person say, “its been a long time since I’ve had an artichoke, this is delicious”! Added bonus is it takes a while for folks to eat this appetizer so I have plenty of time to finished the main course.

Microwave version was wonderful. Much less kitchen time and mess. Made one artichoke for single person. Put 1/2” water with lemon juice in microwaveable bowl. Dipped top of cut artichoke in liquid to prevent cut edges browning before wrapping. Placed wrapped artichoke in bowl with stem area open in liquid. Served warm with melted butter. Definitely will be my go-to recipe. Yum!
