Ingredients
- 1 large yucca root, peeled and sliced 1/8 inch thick
- 2 tablespoon olive oil
- 1 bunch cilantro, chopped
- Juice of 3 limes, divided
- 3 medium avocados, diced
- Salt and pepper to taste
Instructions
- In a large bowl, toss yucca, olive oil, half of the cilantro and the juice of one lime. Season chips with salt and pepper. Coat a baking sheet with nonstick spray, then lay yucca slices flat on a baking sheet. Bake for 4 to 6 minutes per side, or until golden brown.
- In a medium bowl, mix diced avocado with remaining cilantro and lime juice; season with salt and pepper and mash to your favorite consistency – I like mine chunky. Save those avocado shells to use as a serving “bowl.”

Reviews
I used my Breville food processor to slice the Yucca root at 3mm whch is a smidge less than 1/8″ and I tought the were too thck and hard to bite. If I try it again, I will slice them 1mm and cook at 475 on convection.
After reading another review in which they also complained about the lack of a baking temperature. I took the temperature that they cooked theirs at and increased it to 475 degrees. They cooked very well at that temperature but I am sorry, I didn’t time it. I would say it was about 6 minutes per side. Total of 12 minutes. They were so tasty that they went faster than the tortilla chips at the party I made them for. I am very pleased with the outcome.
First of all, the recipe does not say a baking temp. Second, it takes way longer than 6 min per side!!! They turned out to be somewhat good sliced very thin at 450 degrees and in about a half hour total bake time.
