Cavatelli with Sauteed Broccoli and Garlic

Ingredients

  1. 4 tablespoons olive oil
  2. 3 cloves garlic, minced
  3. 2 to 3 cups broccoli florets, or to taste
  4. Salt
  5. 1/2 teaspoon red pepper flakes, or to taste
  6. 1 1/2 cups canned chicken broth
  7. 1 pound cavatelli, cooked according to package directions
  8. Freshly grated Locatelli pecorino Romano

Instructions

  1. In a saucepan, heat the olive oil over moderate heat until hot. Add the garlic and cook it, stirring, until pale golden. Add the broccoli, salt, and red pepper flakes and cook, stirring, for 2 minutes. Add the chicken broth and simmer for 5 minutes.
  2. Meanwhile, cook the pasta. Drain the pasta and transfer it to the saucepan. Toss with sauce to combine. Serve with the cheese.

I am alarmed by the fact that this recipe has “vegetarian” written on the picture but has chicken broth in the ingredients!  Obviously a vegetarian would know to replace it with veggie broth but what if someone prepared it for a vegetarian not realizing the difference?

This is a traditional recipe that is very good. When I make this during lent (no meat Fridays) I use a little vegetable broth in place of chicken broth. I also find it helpful to par boil the brocolli with the cavatelli, add the brocolli to the pot for a min or two, then remove it  with a slotted spoon & transfer to the pan. I also add a couple of ladle fulls of the starchy pasta water to the pan. It makes for a richer sauce when you add the cheese…needs lots of cheese I like to use a chopped up hot red pepper (that comes in the jar of red/green) in place of the crushed red pepper flakes. It adds a nice spice if you like it hot.

I have been looking for a traditional Cavatelli & Broccoli recipe and this one is perfect. You could make it exactly as is and be very happy…personally I sauté a chopped yellow onion for 2 mins before I add the garlic to the olive oil and I also add grilled chicken to the final product before I add in the cup of parmesan cheese.
