Bourbon-Flavored Pecan Pie

Ingredients

  1. 3/4 cup sugar
  2. 1/2 cup dark corn syrup
  3. 2 1/2 tablespoons unsalted butter, cut into cubes
  4. 1 1/2 teaspoons vanilla extract
  5. 1 1/2 teaspoons bourbon
  6. 1/4 teaspoon kosher salt
  7. 2 large eggs
  8. Cooking spray
  9. 1 sheet refrigerated pie dough (half of a 15-ounce package)
  10. 1 cup pecan pieces
  11. Whipped cream, for serving (optional)

Instructions

  1. Preheat the oven to 350 degrees F. Stir the sugar and corn syrup in a saucepan over medium heat until the sugar melts. Remove from heat. Add the butter and let melt, slowly stirring with a rubber spatula to keep the mixture from getting foamy. Gently stir in the vanilla, bourbon and salt.
  2. Whisk the eggs in a medium bowl. Gradually add the sugar mixture, whisking until incorporated.
  3. Lightly mist four 4-inch individual pie pans with cooking spray. Unfold the pie dough and cut into quarters; press each piece into a pan and crimp the edges with your fingers. Place on a baking sheet. Divide the pecans evenly among the pie shells and pour the filling on top.
  4. Bake the pies until golden and firm, about 45 minutes. Cool completely on a rack, then carefully remove from the pans. Serve with whipped cream, if desired.

I made mine with only bourbon. After I drank an 8oz class, I was pretty buzzed. I finished the bottle and slept in late the next day. It kind of hurt, but I liked it.

I’m surprised this recipe has so little reviews. I saw this recipe in the Food Network Magazine. It’s supposed to be Justin Timberlake’s grandmother’s recipe. It’s one of the best pecan recipe’s I’ve tasted. And I’m not just saying that because I’m a JT fan! The bourbon adds a little “twang” to it, and the miniature size is perfect for one serving (or two, if you feel like sharing…
