Zucchini and Olive Flatbread

Ingredients

  1. All-purpose flour, for dusting
  2. 1 pound pizza dough
  3. 1 tablespoon extra-virgin olive oil plus extra, for drizzling
  4. 1 large (8 ounce) zucchini, trimmed and cut into 1/8-inch slices
  5. 2 tablespoons chopped fresh oregano leaves, divided
  6. 1 1/2 cups (4 ounces) shredded mozzarella
  7. 1 cup (2 1/2 ounces) grated Pecorino Romano
  8. 1/2 cup pitted sliced black olives

Instructions

  1. Place an oven rack in the lower third of the oven. Preheat the oven to 450 degrees F.
  2. On a lightly floured work surface, roll out the dough into a 12-inch circle. With a pastry brush, brush 1 tablespoon of the oil over the dough. Using the tines of a fork, prick the dough all over. Arrange the zucchini slices in a single layer on top of the dough. Drizzle the zucchini with oil. Bake the dough for 18 to 20 minutes until the edges begin to brown. Remove the bread from the oven, sprinkle with 1 tablespoon of oregano, the cheeses, and the olives. Bake for 5 to 7 minutes until the cheeses are melted and bubbly.
  3. Sprinkle the flatbread with the remaining oregano, cut into wedges and serve.

I thought I would try using garlic oil recipe from my other favorite chef so I put about 3T of EVOO and 2 garlic cloves into a small saucepan and simmered over low heat for about 3 minutes.  Then I removed garlic and brushed pizza dough with oil and drizzled some of it on top of zucchini.  Had a little bit of oil remaining in pan.  After baking zucchini and crust, I sliced the garlic and put on top and then added other ingredients.  I baked at 425 since I was afraid of burning crust.  Pizza is fantastic, better than any store bought pizza.  Thanks Giada!

I hadn’t made this in a while and just made it again over the weekend and forgot how much I enjoy it! I do add other seasonings (ie some crushed red pepper flakes) but then I also add red onions which really gives a ton of flavor. This is a great picky for a group.

I really thought that I would love this, but for me it turned out to be only okay. I think some garlic and a little bit of tomato sauce would elevate this recipe for me. I will try it again with those changes and see if it’s better.

This is delicious! I forgot to rewatch the video before making, so I didn’t cut the zucchini quite as thin as she did.. but it was still so good. I like the suggestion to add pancetta, I think I will try that next time. I’m also not sure how you could say this is flavorless unless you can’t taste salt or used poor quality olives. The olives are so salty and add plenty of flavor.

I’ve made this recipe several times as written and it is so good. Yesterday I made it again with a modification. I added chopped black and green olives and eliminated the mozzarella, using just the pecorino romano. Made a delicious appetizer!

This recipe was very tasty. My fiance and I enjoyed it a lot! The olives to add the perfect amount of saltiness and the cheese was amazing!
