Tuna Quesadilla

Ingredients

  1. 2 small (3-ounce) cans tuna, drained and flaked
  2. 1/2 cup salsa, drained
  3. 1/2 cup chopped fresh scallions
  4. 1 cup shredded Cheddar
  5. Three 12-inch flour tortillas

Instructions

  1. Mix tuna with salsa and scallions. Fold in Cheddar. Divide mixture into 1/3’s and spread each portion over 1/2 of a tortilla and fold into a half circle. Brown each of the 3 quesadillas on both sides in a hot pan to melt cheese. Cool a bit, cut into wedges and serve.

I make this in the microwave at work minus the scalions.  This is my “working through lunch” meal, that’s quick and easy to fix.  1 minute to put together and 1 minute to zap in the microwave.

I wouldn’t say it was a terrible recipe but I wouldn’t call it genius either! It’s a twist on the good ole’ tuna melt!

Novel idea, always looking for something with tuna! Going to use tomatoes instead of salsa and some Mexican seasonings! Don’t like spicy hot foods tho’ and can’t understand how people can continually eat something so spicy! Haven’t they read what it can do to the stomach? Had three friends that died of stomach cancer and they all had to have hot seasoning on everything……..everything!

I absolutely loved this dish. It was quick and easy, and my 7 and 2 year loved it. It didn’t sound too good at first, but the melted cheese just blended all the flavors together really well.

Well, it’s not a five star, but i would use fresh tomatoes, onion, and green pepper to make it a little more healthy and i did use whole wheat tortillas, but the taste was still quite bland.

sorry this does not deserve 5 stars! it’s a very startling recipe, and while some people seemed to enjoy it, mixing a can of tuna with jarred salsa and store bought flour tortillas is not a 5 star recipe. its actually kind of sick. do not recommend.
