Tuna Mini Melts with Rosemary

Ingredients

  1. Italian tuna in olive oil, lightly drained
  2. 1 small shallot, finely chopped
  3. 1 large sprig rosemary, leaves stripped and finely chopped
  4. Black pepper
  5. 4 slices provolone cheese, deli sliced
  6. 16 rounds sliced sesame baguette
  7. 2 tablespoons butter

Instructions

  1. Mash tuna with finely chopped shallot, rosemary and black pepper. Quarter the sliced cheese. Build mini sammies of bread, cheese, tuna, cheese, bread. Melt butter in skillet over medium heat. Grill sandwiches on both sides until golden. Remove from skillet and serve.;

This was so good. I made it with a regular baguette and I used swiss cheese instead of provolone and dried oregano instead of rosemary, but I am sure it is great the original way. This is great for a little party snack.

My husband always requests these. Except I don’t always have fancy bread around so I make them like grilled cheese. I use regular sandwhich bread, butter one side and grill it in a skillet. They still taste really good this way but I’m sure even better when you have the right bread.

I made these as regular size sandwiches and they were absolutely fantastic. I placed mine with the cheese on fresh wheat sour dough bread, which complimented the herb flavored tuna perfectly. I then pressed in a panini grill, which made it the perfect lunch. So awesome. Thanks so much!

My kids love this. I used regular tuna and just added a little EVOO. Go easy on the red pepper if you’re serving kids.

I made this recipe on whole grain white bread with alpine lace and added a few capers to the existing recipe. Grilled it on the george foreman grill and it was delicious!!!!!!!!!! My first tuna sandwich without mayo and I didn’t miss it.

I totally loved this recipe, my kids ate it all too. I’ve never had tuna without mayo and I loved it and I did try it with the cooking spray too and it worked well. I also put a little jalapeno into my husband and my sandwich and it gave it just a little kick but was very good as well. 🙂

I could only get Tuna in Safflower oil, which worked fine. Added a little celery salt and cooked the sammy’s on my George Foreman grill. Perfection plus! Served with coleslaw and bread and butter pickles. I have never had tuna without mayo, but did not miss it one bit.
