Ingredients

  1. 1 baguette
  2. 2 (6-ounce) cans white meat tuna packed in water, drained
  3. 1/4 cup capers, drained
  4. 1 large shallot, minced
  5. 1/3 cup extra-virgin olive oil
  6. 3 tablespoons fresh lemon juice
  7. 2 tablespoons chopped fresh parsley leaves
  8. 15 to 20 grinds of black pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. Slice baguette into 1/2-inch thick slices and place on a baking sheet. Bake until toasted and golden, about 5 to 10 minutes.
  3. Combine all remaining ingredients in a mixing bowl and mix thoroughly.
  4. Top each toasted baguette slice with about 1 tablespoon of the tuna salad.

This recipe was very easy to put together and makes for very good snacking, something my wife and I enjoy while watching TV or playing board games.

Would make an excellent canape or hors d’oeuvre. Add a robust salad and it becomes a complete meal.

What a great appetizer. I used red onion instead of shallot and cilantro instead of parsley and it was incredible. So easy. Great for lunch as well as appetizer.
