Ingredients
- 1 package deep fried tofu purses, aka abura-age-dofu (available in Asian supermakets)
- 3 cups sushi rice, recipe follows
- 3 cups enoki mushrooms
- 3 cups scallions, sliced on the bias
- 3 cups carrots, julienne
- 3 cups sesame seeds, toasted
Instructions
- Follow the instructions on the package for the tofu purses and boil the individual packets for 5 minutes. Remove the packets from the boiling water and allow the packages to cool. Open the packages and remove the fried tofu pockets. Fold the mouths of the packages inward to about 1/4 depth of the pouch to make purses. Fill the purses with sushi rice and a variety of other vegetables and garnishes to suit your taste.
