Ingredients
- 1/2 pound thick-sliced bacon, cut into 1/2-inch pieces
- 1/2 medium sweet red pepper, diced
- 1/2 medium sweet green pepper, diced
- 1/2 large white onion, diced
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 (14.5-ounce) cans chicken broth
- 3 canned chipotle chiles, minced
- 2 (14-ounce) cans corn
- 1 cup lowfat milk
- 1/2 teaspoon salt
- Monterey Jack Quesadillas, recipe follows
- Cilantro leaves, for garnish
- 8 flour tortillas
- 1 cup Monterey Jack, shredded
- 1/4 cup picked cilantro leaves
Instructions
- Cook the bacon in a large stockpot over medium heat until it begins to crisp. Spoon off the bacon fat, except for a thin coating. Add the peppers and onion to the bacon and continue cooking, stirring frequently, until the vegetables are tender.
- Add the sweet potatoes, chicken broth, and chipotles and simmer, covered, 15 minutes or until the potatoes are tender. Stir in the corn, milk, and salt; heat through. Serve with quesadillas and garnish with cilantro.
- Heat tortillas in a preheated 350 degree F oven until warm. Top each with some shredded Monterey Jack and a few cilantro leaves. Top each with another tortilla. Heat until cheese is melted.
- Yield: 4 servings

This is a fun and flavorful chowder. My modifications are similar to those noted by others. I use green chilies instead of chipolte, 1 can cream corn & 1 can sweet corn and at least 1/2 & 1/2, usually light cream. If I’m putting 1/2 lb of bacon in a soup why skimp on the cream?
Loved the chowder but made a few small changes as I didn’t LOVE it as the recipe read. I pureed all the sweet potatoes to make it thicker and added one bag of frozen corn vs. the 2 cans of corns. Bacon is best added on top with a dollop of sourcream. Enjoy!!
This soup is Delicious!! It will be a regular at our house!! I added green chilies instead of chipotle chilies and added a pound of cubed pork chops that i fried in oil and cooked fully before adding to the soup. It was a huge hit!!
My husband just made this ‘chowder’ – how disappointing! It had very little flavor, the bacon wasn’t crispy after being in the soup, and it wasn’t at all thick and creamy like a chowder should be. Instead, we renamed it Poor Man’s Gruel.
We just had this for dinner… YUM! Nice balance of flavors. I like the sweet with some heat. We didn’t have canned corn but we did have 2 cans of creamed corn and 1/2 a cup of frozen corn. I also added a pound of cubed raw chicken and browned it after the bacon.
I didn’t have the chipotle peppers so I used chili paste but otherwise followed the recipe. WOW was this good! Why go out when you can eat this well (and this easily) at home!
This is a fantastic chowder. Very unique flavors. My husband puts some shredded cheddar cheese on top to meltand sour cream-its great.
This soup was a wonderful blend of flavors. It will be showing up on our table again.
This chowder was very interesting. Sweet and spicy. My husband loves sweet potatoes (I just think they are o.k.) But we both love spicy. The combination was wonderful. It would make a great surprise soup for any dinner party. I am a soup maker and it was nice to have something this creative.
My whole family loved this recipe and it shows up on a regular basis. I like to use the sweet potatoes this the bright orange flesh. This soup is beautiful in the bowl. The 2% milk I use tastes just fine. Here are some of the changes that I made. I use 1 lb of frozen corn instead of the canned. I stopped using the chipotle chiles. I didn’t like the hard seeds and we don’t normally have them on hand. I use whatever I have handy to add heat. Chile Paste, Fresh or dried chile peppers, Tabasco, etc. I cook the bacon until it’s very crispy and then remove it. We sprinkle it in our bowls at serving time. I personally like to add Tabasco and lime juice to my own bowl. Yum! It reheats well in the microwave at med-low heat. My son will eat this as an after school snack, and I think that’s great!
