Roasted Red Bell Pepper Hummus

Ingredients

  1. 16 ounces chickpeas
  2. 6 ounces roasted red bell peppers
  3. 1 jalapeno, seeded, diced
  4. 1 tablespoon chopped garlic
  5. 3 tablespoons chopped cilantro leaves
  6. 1 teaspoon paprika
  7. 3 tablespoons chopped onion
  8. 1 teaspoon freshly cracked black pepper
  9. 1 tablespoon chipotle pepper in adobo
  10. 1/4 cup extra-virgin olive oil
  11. Toasted pita bread, for serving

Instructions

  1. Mix all ingredients, except olive oil and pita bread, in food processor until pureed, then slowly add in olive oil.
  2. Let set up for 1 hour prior to serving.
  3. Serve with toasted pita bread.

I have just made this for the first time and it’s amazing! I did add a tablespoon of tahini and a teaspoon or so of lemon juice to balance it out but off the charts good!

Taste-wise, this was decent. I’ve never been successful at getting the texture of a hummus right. So, this one was no different. It came out a bit chunkier than I would like. Worth a shot, but not something I would make again.

I thought this hummus recipe was fantastic! I agree with some other reviews here that it definitely needed to sit in the fridge for a couple days to really let the flavors meld. The initial taste was good, but after two days in the fridge…PERFECTION!

I really did not like this hummus. I threw it away. It was too spicy/smoky and I went easy on the adobo. The consistency was off too. I have to agree with anonymous below:(

This was one of the worst hummus dishes I’ve ever made. It was way too spicy/smoky and didn’t have the consistency of a good hummus. It tasted like a salsa made of chickpeas.
