Quick Garlicky Bruschetta with Tomatoes and Basil

Ingredients

  1. 1 cup diced ripe tomatoes
  2. 2 tablespoons chopped fresh basil leaves
  3. 2 teaspoons olive oil
  4. 1/2 teaspoon garlic powder
  5. Salt and ground black pepper
  6. 1 loaf French bread, sliced diagonally into 1-inch thick slices and toasted

Instructions

  1. In a small bowl, combine tomatoes, basil, olive oil, and garlic powder. Mix well to combine. Season, to taste, with salt and black pepper.
  2. Spoon tomato mixture on toasted bread slices and serve.

Do you use fresh tomatoes or canned? In the middle of the winter on the eastcoast of the US the tomatoes are not that good, so I’d like to use canned seasoned tomatoes. Any good?

I grill my bread first with olive oil. I also add onion to the mix with fresh garlic…nothing is better than fresh garlic. This is refreshing when you grill any meal with the fresh tomatoes. I also usually top (when the bread is nice and hot) with mozzarella cheese and then add the tomato topping. Then add parm on top of the tomatoes. I have made this for YEARS and even the kids love it.
