Plantain Chips and Avocado Aji

Ingredients

  1. 2 large eggs
  2. 8 scallions, white and light green part only, finely chopped
  3. 2 medium tomatoes, cored and finely chopped
  4. 1 1/2 cups finely chopped fresh cilantro leaves
  5. 1/4 cup fresh lime juice (about 3 limes) plus extra lime wedges for serving
  6. 1/4 cup white vinegar
  7. 1/4 cup water
  8. Salt
  9. 8 medium Hass avocados, halved, pitted, peeled and chopped into small cubes
  10. Hot sauce
  11. 1 bag plantain chips

Instructions

  1. Place the eggs in a medium saucepan and cover them with water. Bring the water to a boil, cover and turn off the heat. Let the eggs sit for 10 minutes. Cool the eggs completely before peeling and chopping into small cubes; set aside.
  2. Place the scallions, tomatoes, cilantro, lime juice, vinegar, 1/4 cup of water and some salt in a large bowl and stir to combine. Add the avocados, eggs and a few dashes of hot sauce and stir gently to combine, being careful not to mash the avocados or eggs too much. Cover with plastic wrap and refrigerate until chilled. Serve within a couple of hours with tortilla chips.

I saw Ingrid at the Womens Expo in Knoxville two weekends ago. She had this dip with her and let the audience try it. It was DELICIOUS. I couldn’t tell there were hardboiled eggs in there, but after reading this recipe I think that it gave it a very good flavor. And so what if she uses store-bought ingredients? If it’s good, don’t fix it. It’s a great way to make a quick dish even faster. Don’t knock this until you try it!

Hardboiled eggs? I’m all for interesting cuisine but the eggs in this ruin the whole recipe for me! Yuck!

This had a nice flavor and texture. I bought some homemade green plantains (tostones) from a local restauant. Much better than bagged ones. To the previous viewer, the plantains are for dipping not to be added to the Aji.

The recipe is fine with the exception that no mention is made as to when to add the plantain chips to the mixture.
