Ingredients

  1. Roasted eggplant slices
  2. Spicy pasta sauce
  3. 1 cup shredded mozzarella
  4. 1/4 cup grated Parmesan
  5. 1/4 cup chopped fresh basil leaves

Instructions

  1. Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  2. Arrange eggplant slices on prepared baking sheet. Top each slice with an equal amount of sauce and then top with mozzarella and Parmesan. Bake 8 to 10 minutes, until cheese is bubbly. Top with basil before serving.

Looks good, except I would like to have seen info on how long to roast the eggplant and at what temp.  The other info was great.

I’m giving it a “2” because it lacks directions how to make the “roasted eggplant slices”. 

Granted, that’s not too difficult to figure out, but I always have assumed that TVFN recipes were intended for total novices.

Very good and much healthier than traditional eggplant parm. As per one reviewer, next time I will cut my eggplant in 1″ slices. Used homemade sauce and served over thin spaghetti.

have never roasted anything or made eggplant. came out great! i used provolone since we didn’t have mozzarella. it was absolutely delicious!
