Ingredients

  1. 1/2 stick butter
  2. 2 tablespoons olive oil
  3. 2 shallots, finely diced
  4. 2 cloves garlic, minced
  5. 2 pounds mussels
  6. 2 cups white wine
  7. 1 pinch saffron
  8. 2 tablespoons chopped fresh parsley leaves
  9. Salt and freshly ground black pepper

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat. Add the shallots and garlic and cook until softened, about 4 minutes.
  2. Add the mussels, wine, saffron, and parsley and season with salt and pepper, to taste. Give it a good stir, cover the pot, and cook until all the mussels open, about 8 to 10 minutes. Discard any mussels that have not opened. Transfer to a large bowl and serve with crusty bread.

fabulous….this was the “Queen” of the Tapas party. We each had to make a dish and this was my dish. Even went so far as to make this on the gas grill since the stove was being used by several others.

Easy to make and delicious. Be sure to have lots of crusty bread to soak up all of the wonderful sauce.
