Ingredients
- 2 pieces provolone cheese (about 1 1/2-pounds total)
- 1/4 cup extra-virgin olive oil
- 1 tablespoon dried oregano
- 1/4 teaspoon chili flakes
- 5 to 6 cloves garlic, minced
- 1 tablespoon freshly minced parsley leaves
- Grey salt and freshly ground black pepper
Instructions
- Prepare a charcoal or gas grill.
- Rub the pieces of provolone all over with the olive oil and season with the rest of the ingredients. Let marinate refrigerated for 1 hour. Grill the cheese on the hot grill over moderately-high heat for about 2 minutes per side until grill marks appear and the cheese just begins to soften.
- Transfer the cheese to a metal plate or baking dish on top of the grill. Cook until the cheese just barely starts to melt and begins to brown on the bottom, about 3 to 5 minutes.
- Serve hot with crusty bread or grilled bread slices.

This has become our absolute first choice when we want to wow our friends! However, we made quite a mess when we actually tried it directly on the grill. So, now we marinate a 3/4″ round of provolone overnight in a generous amt of olive oil, garlic and lots of fresh herbs–anything goes. Then we just dump the cheese, oil and all, into a 6″ cast iron skillet. We then grill it until the cheese is bubbly and the edges begin to brown. Serve right in the skillet, with bagette toasts rubbed with a garlic clove. Rustic, simple and delicious! Thank you, Michael!
Made this yesterday from memory and couldn’t remember the exact marinade so I ended up using basil along with the rest of the ingredients – it was fabulous. I also couldn’t get any good quality provolone, so I did two batches – one with Asiago and one with aged white cheddar. Both were big hits. Can’t wait to experiment with other cheeses too!
Every party or gathering I’ve made this at it is the first thing to go. People love iit!
This was so easy and a great hit at my annual BBQ. The key though is to get GOOD Provolone. Very nice and simple. I use charcoal and this worked well for me!
This was very good and certainly easy if you already have the grill fired up. Just eat it right away or the cheese cools and becomes solid again.
It is a GREAT recipe, I got the kids to help with the prep work, I grilled and we all enjoyed it GREATLY!! Very simple, put packed with flavor… Yummy!!

The spice combination complimented the cheese so well. It was wonderful. I would serve it at any party. And it is fairly uncommon so I think people would ask me about the recipe, which I did print out for myself. Great!
