Ingredients
- 1 loaf day old country bread
- 6 whole canned tomatoes
- 6 roughly torn basil leaves
- 3 tablespoons olive oil
- 2 cloves garlic, peeled
Instructions
- Preheat a grill or grill pan.
- Slice your bread thickly, and place slices on a dry grill to brown, about 30 seconds on both sides. Take canned tomatoes, place on cutting board, and slice. Add the basil to the canned tomatoes in a large bowl. Add olive oil and season with black pepper, to taste.
- Remove carmelized bread from grill and rub each side with cloves of garlic. Top with spoonfuls of mixture and serve immediately.

Made this as an appetizer for an italian dinner I made (Chicken Picatta ((also found here)) and WOW! I was totally impressed with this reciepe and impressed with myself! Guests totally LOVED it and wanted more!
So easy, we make it at least a couple times per week. Also, just toasted bread and used canned diced tomatoes. Yummy!
This recipe is easy to prepare and yummy! I just added a touch of mozarella cheese and it was complete.
I loved this and it did last for several days. I used diced canned tomatoes and roasted/baked garlic that I spread on the bread instead of fresh and it was really yummy. I drizzled the top with the olive oil instead of adding it to the misture along with a small drizzle of balsimic vinegar.
What an easy and quick way to make a delicious bruschetta! I added fresh mozzarella, cut in small cubes, and added to the mixture prior to topping the garlic toast! Yummolicious!

This is an awesome recipe that is soooooooo easy to make, not to mention cheap! It holds up well in the fridge for almost a week. Instead of making a whole loaf of toast in the oven I make mine in the toaster for smaller portions.
I had to adapt this recipe to what I had on hand, but it was still so good I had to go back for more. Thank you, thank you! I plan to share this one with friends.
I ended up using crusty french bread, canned diced tomatoes (they already had garlic and basil), and good olive oil. I also had the garlic on hand to rub onto the bread. I was grateful to find this recipe as I was looking for a way to include canned tomatoes in tonight’s menu. Thanks, again!
