Ingredients

  1. 3 large carrots, peeled
  2. 1 green bell pepper
  3. 1 red bell pepper
  4. 1 cup broccoli florets
  5. Smoky Ranch Dip, recipe follows
  6. 1/2 cup mayonnaise
  7. 1/2 cup buttermilk
  8. 2 teaspoons honey
  9. 1/3 teaspoon cider vinegar
  10. 1/2 teaspoon fresh chopped dill leaves
  11. 1/2 teaspoon freshly chopped parsley leaves
  12. 1/4 teaspoon freshly chopped chives
  13. 1/4 teaspoon smoked paprika
  14. 1/4 teaspoon onion powder
  15. Pinch granulated garlic
  16. Salt and freshly ground black pepper

Instructions

  1. Using a mandoline, thinly slice carrots in wide strips. Lay flat and cut out as many shapes as possible with small cookie cutters. Slice the sides of the peppers. Lay flat and again, cut out shapes with cookie cutters.
  2. To serve, arrange the carrots, peppers and broccoli on a platter surrounding the Smoky Ranch Dip.
  3. In a small serving bowl, mix all ingredients until well combined.

I am going to try this dip out on my 6 yr old today. He is such a picky eater. He will seriously eat salad plain… no dressing…. I keep trying variations of dips and dressings with no success. Even if he doesn’t like it, I can already tell you who will – my husband and myself 🙂

A bit thin for a ‘dip’, but makes a nice dressing. I ended up using it for the dressing in my chicken salad. Nice flavor but too runny for veggies.

This is a very good dip that is so easy to make. I will definitely be making this one again. I made some boneless buffalo wings and put some of this dip on them and they were delicious.
