Yield: 6 servings

Ingredients

  1. 12 large jalapeno peppers
  2. 1 cup Mexican blend shredded cheese
  3. 6 thick slices bacon

Instructions

  1. CAUTION: Jalapenos can be very hot. Use caution and wear rubber gloves if you have skin sensitivity. Keep hands away from face and eyes. Wash hands thoroughly with warm water and soap when finished handling peppers.
  2. Slice peppers from stem to tip on 1 side. Carefully squeeze ends of pepper (like a change purse) and scoop out seeds and veins with a small spoon. Stuff each pepper with shredded cheese. Cut bacon slices in half. Wrap each pepper with a piece of bacon and secure with a toothpick.
  3. Preheat grill. Grill peppers 3 to 5 minutes on each side or until bacon is cooked, but not crisp.
  4. Remove from grill and serve while hot.

Gloves? Part of the fun of cooking with Jalapenos is that hours after eating a mouth sizzling helping of stuffed jalapeno’s, you rub your eyes and…..well, you light them up from the jalapeno juice! HA! Gloves are for the weak of life. I will warn you, there are other parts of your body that will pay the price if touched! Van Halen said it best “Fair Warning!” Oh yeah, enjoyed the recipe. Could have been hotter!

If you forget to use gloves and find your hands burning later-I’ve done this a million times and never learn. Milk helps with the burning. You can pour a little in your hands and rub them together, or pour some in a pan and soak them.

The recipe was great! My husband I made them for a party and they were a huge hit! We plan on making them again this weekend.

Oh my gosh – these were fantastic – don’t skimp on the amount of bacon. Made this as one of the appetizers for a large party and these were THE hit!!!! It’s alot of work to prepare these but it is so worth it!

these are great but I recommend muenster to soften the heat a little bit..

the peppers are great but let me give u something u may find more enjoyable as far as making them. through experiment and the joy of cooking i have found that instead of shredded cheese. use cream cheese, it gives it a much more creamier taste and its guaranteed to please any guest

These were tasty little guys but spicy! I could hardly stand eating them because of the heat. I will try blanching them or baking them next time to reduce the jalapeno heat. Some of my cheese oozed out so next time I will try wrapping each one tight with aluminum or at least putting aluminum on the grill. I used smoked bacon. I will definately give this another go. So easy and tasty!

So good! I wrapped these in turkey bacon. Will make over and over again.

I personally love hot peppers but I cook for a lot of people that prefer a little milder taste so I blanch the peppers after I?ve cleaned them for just a couple of minutes.

I just fixed these accept I baked them in the oven at 350 degrees for 25 minutes or depending on how done you like your peppers and they were wonderful!!! Great job Sandra!! Can’t wait to make them for my friends and family!!
