Grilled Halloumi Cheese

Ingredients

  1. 1/2 pound (2-slabs) Halloumi cheese
  2. 2 tablespoons extra-virgin olive oil
  3. Cheese Marinade, recipe follows
  4. 1 shallot finely diced
  5. 1 tablespoon minced garlic
  6. 1 lemon, juiced
  7. 2 tablespoons extra-virgin olive oil
  8. 1 teaspoon freshly cracked black pepper
  9. 1 tablespoon freshly chopped parsley leaves

Instructions

  1. Preheat grill to high heat.
  2. Brush cheese with 2 tablespoons oil. Grill on each side for 2 to 3 minutes until well marked. Remove from the grill. Pour marinade over the cheese and toss. Slice cheese into 1/2-inch pieces and serve.
  3. In a bowl, stir all the ingredients together.

I absolutely love watching Aaron cook – and when I saw Halloumi on sale this weekend at Whole Foods, I decided to grill some a la Aaron for my superbowl guests. What a hit! It was the first thing to disappear from the table! Thanks, Aaron – keeping cooking! The lemon juice parsley shallots and garlic were the perfect flavorings! Oil keeps it from sticking – It’s really yummy – try it!!!

This was very tasty and easy to make – can’t ask for more than that. I used fresh parsley but I am guessing that thyme or basil might work too. It would work as either an appetizer or a vegetarian entree with a side of pasta.

This is reaaalllllyy good. The cheese was hard to find, but they had it at Whole Foods. You have to eat it right away or it gets rubbery. I didn’t make the whole marinade, I just squirted some fresh lemon juice over the cheese and sprinkled on some fresh oregano leaves. Freakishly good. The husband and neighbor farmers liked it, so it’s nothing scary. The thing I appreciate about Aaron’s recipes: they are always really good and if I make something for a bunch of people, they will ALL like it. He has mass appeal. Thank you Food network for giving us another season.
