Fresh Salmon Tartare

Ingredients

  1. 1 pound skinless fresh salmon fillet
  2. 1/2 pound smoked salmon, thickly sliced
  3. 1/3 cup freshly squeezed lime juice (3 limes)
  4. 1/3 cup minced shallots (2 shallots)
  5. 2 tablespoons good olive oil
  6. 1/4 cup minced fresh dill
  7. 3 tablespoons drained capers
  8. 2 tablespoons Dijon mustard
  9. 1 tablespoon whole-grain mustard
  10. 2 teaspoons kosher salt
  11. 1 teaspoon coarsely ground black pepper
  12. 1 loaf seven-grain bread, thinly sliced and toasted, for serving

Instructions

  1. Cut the fresh salmon and the smoked salmon in 1/4-inch dice. Place the salmon in a mixing bowl and add the lime juice, shallots, olive oil, dill, capers, two mustards, salt, and pepper. Mix well, cover with plastic wrap, and refrigerate for a few hours for the salmon to marinate. 
  2. When ready to serve, toast the bread and taste the salmon for seasonings. Serve the tartare with triangles of the toast.

Great base. Followed the recipe exactly which is unusual.
Felt it needed a bit more fresh dill and lime. Added the zest of a lime to punch it up.
Served with some hot sauce on the side for some kick if you wanted

This is a fabulous appetizer! I don’t like raw onions so I leave them out. If you add a chopped avocado it will neutralize the saltiness. I think it could even stand a bit a chopped mango as well. Prepare it a day in advance.

Made this Christmas Day but realized my mustard had expired. Only store open only had spicy mustard. It worked HUGE hit. I even liked it and I don’t usually like salmon. Thanks Ina
