Devilish Eggs

Ingredients

  1. 1 dozen eggs
  2. 2/3 cup silken tofu, drained
  3. 1 tablespoon mayonnaise
  4. 1 tablespoon Dijon mustard
  5. 1/2 teaspoon hot sauce, plus more to taste
  6. 2 teaspoons prepared horseradish
  7. 2 tablespoons chopped chives
  8. Salt
  9. Freshly ground black pepper
  10. 1/4 teaspoon paprika

Instructions

  1. Place the eggs in a large saucepan and cover with water. Place over high heat and bring to a boil. Reduce the heat to low and simmer for 9 minutes. Remove the eggs from water and run under cold water for about 1 minute or until cool enough to touch. Peel eggs under cold running water.
  2. Slice the eggs in half lengthwise. Scoop out the yolks and discard 6 of them or save for another use. Set aside the whites.
  3. Place the remaining yolks in a medium bowl and mash with the tofu, mayonnaise, mustard, hot sauce, horseradish and chives. Season with salt and pepper.
  4. Spoon the mixture into the corner of a plastic bag and snip off the end. Pipe the yolk mixture into the egg whites. Arrange on a platter and sprinkle with paprika.

This is supposed to be healthy? Soy is not healthy. Plus, the egg yolks that you removed, is a healthy fat that people need. The yolk contains most of the vital nutrients an egg offers! These kinds of “healthy” solutions she suggests are part of why people are so sick nowadays. These are the things I study and research, and so I’m sorry, but this drives me crazy!! My friend wanted to try this, so we did. That’s how I ended up here. She wanted to try tofu for the first time and can’t eat enough deviled eggs! She ended up not liking these, and I didn’t like the taste or consistency of this recipe either, and this is regardless of my view. My suggestions would be to stick with the egg yolks, and to recommend olive oil mayo. Canola oil is full of omega-6 and not the good omega-3 fatty acids. Yes they do have mayo in stores made of olive oil and not canola oil. :-

To peel eggs.. after boiling your eggs Drain water
replace with cold water and ICE.. add ice if needed
and let sit for 20-30 minutes.. THEN peel.. I get great
results from this technique! Thanks MS!

Not a real fan of these, would stick to the norm for us, pickle relish and mustard. As far as pealing hard boiled eggs, I only use eggs that are at least a week old.

Totally at a loss for why one would discard perfectly good egg yolks and buy silken tofu to make up the volume! The lecithin you need to process the cholesterol of the yolks is in the egg whites.

Another great recipe. 2 Changes. 1 I cant imagine dev eggs without sweet relish in them. Added and it was fantastic. 2Instead of mashing the ingredients I put in a food processor for smooth consistency. Best eggs I have ever had.

Amazing recipe, everyone gobbled the dozen eggs in 10 minutes. Now i only wish i could get the to peel nicely… i follwed these directions and peeling was terrible… other than terrible presentation it tasted great!

This is a really easy and really delicious recipe! Nice twist to the regular deviled egg, and great that is so nutritious.I will also use this recipe/ingredients for making egg salad.

For a lower fat deviled egg these are very good. The tofu flavor didn’t jump out at me and the filling was still nice and creamy. Next time I make these I will drain the tofu on paper towel to make it a bit thicker. I did add too much hot sauce, but I like my deviled eggs…deviled.

I enjoyed the eggs but I could taste the tofu. I believe that if you use boars head dijon mustard, more pepper and maybe a bit more chives to hide the tofu taste more.

Horrible, absolutely horrible. My husband and I made these and we took one bite and had to throw them out. I love deviled eggs, but these did not taste anything like regular deviled eggs at all.
