Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Italian dressing mix (recommended: Good Seasons)
- 1 pint cherry tomatoes, sliced in 1/2
- 1 (15-ounce) can pitted black olives
- 4 large fresh basil leaves, finely chopped
- 2 scallions, cut in 1/2-inch pieces
Instructions
- In a medium bowl whisk together olive oil, vinegar and dressing mix.
- Add cherry tomatoes, olives, basil and sliced scallions to bowl. Toss to combine.

I so liked this as the hot summer day started to end.
Simple, elegant, and you can vary it by using different vinegars and herbs. I often thinly slice a red onion into half-moon THIN slices and add. There is rarely any left over, and this is every day cooking at it’s most simplistic. In fact I think I’ll make this with dinner tonight. I think I’ll use calamatas …..
