Ingredients
- 2 tablespoons unsalted butter or olive oil
- 1 medium onion, sliced
- 1 clove garlic, smashed
- 1 russet potato, peeled and diced
- Pinch dried thyme leaves
- 1/2 teaspoon kosher salt, plus more as needed
- 4 cups chicken broth, homemade or low-sodium canned
- 1 (16-ounce) package frozen broccoli, thawed
- 2 to 4 tablespoons cream or half-and-half, optional
- Freshly ground black pepper
Instructions
- Melt the butter in a medium saucepan, over medium heat. Add the onion and garlic and cook until translucent, about 5 minutes. Add the potato, thyme, salt, and broth and bring to a boil. Adjust the heat to maintain a gentle simmer, and cook uncovered until the potato is fork tender, about 10 minutes. Add the broccoli and simmer for 3 minutes.
- Puree the soup in batches in a blender or with an immersion blender. Return soup to the pot and add the cream. Bring to a simmer, taste, and season with salt and pepper.
- Serve with optional toppings.

Good base recipe. Better when you add some carrots and celery, as well as some acid (lemon juice or white wine vinegar) at the end.
This is my go-to broccoli soup recipe. It’s fast easy and delicious and I always seem to have the ingredients on hand. I don’t bother with the cream/half n half, but I do add shredded cheddar when I serve it.
This soup is delicious. I’m not usually a fan of broccoli, but I could eat it this way at every meal.
Followed recipe and it is bland and boring. I’m bummed! I wanted to love it.
I used fresh broccoli that I steamed first using part of the broth. I added a little crushed red pepper too. I used my immersion blender first then added the cream. I sliced up a smoked sausage link & fried it until crispy. I got some bread bowls (from panera) & served the soup in the bread bowl with shredded cheddar & the smoked sausage. It was sooo good!
I have made this soup multiple times according to the recipe and it is a crowd pleaser!
I did not care for this recipe at all. I followed it to a t except I didn’t add any cream. I added more salt and also added pepper and topped it with cheese but overall, just bland.
Excellent. I hit it with some more salt and pepper, used fresh broccoli, and topped it with some parmesan like soft Turkish cheese .
Loved this soup. I didn’t fully puree it because we prefer a chunky texture. Topped the soup with a little bacon and parmesan cheese. My picky husband ate two bowls.
My family wouldn’t eat this. Very bland.
