You can substitute slices of mozzarella in this recipe if you can’t find bocconcini, just make sure it’s freshly made.

Ingredients

  1. 2 cups cherry tomatoes
  2. 1 pound bocconcini (small mozzarella balls)
  3. 1 tablespoon chopped fresh oregano or basil, plus whole leaves for garnish
  4. 2 garlic cloves, minced
  5. 1/4 cup olive oil
  6. Salt and pepper

Instructions

  1. Slice each of the cherry tomatoes in half and toss in a bowl with the bocconcini, herbs, garlic, oil, salt, and pepper. Serve on a platter with herb leaves.
