Ingredients
- 4 medium beets, with root and about 1 inch of the green attached, if possible
- 1/4 cup walnut pieces
- 4 cup watercress, washed well and dried
- 3 ounces reduced-fat soft goat cheese
- 1/2 cup lowfat buttermilk
- 1 1/2 teaspoons white wine vinegar
- 1/4 teaspoon salt, plus more to taste
- Freshly ground black pepper
Instructions
- Put the beets into a steamer basket over a large pot of boiling water. Cover and steam for about 45 minutes or until beets are tender. Drain and let cool until you can handle them. Cut the ends off of the beets and peel them (the peel should rub off easily with a little help from a paring knife here and there). Cut the beets into large dice.
- Toast the walnuts in a dry saute pan over medium-high heat for 3 minutes or until fragrant, and set aside.
- Put the watercress, goat cheese, buttermilk, vinegar and salt into a food processor and process until smooth and creamy.
- Put the beets on a serving dish, drizzle the watercress sauce on top and sprinkle with walnuts.

I spent a lot of time washing and chopping the watercress and making the dressing. Unfortunately I am really disappointed. Maybe the dressing will be better when mixed with beets but right now I feel it is almost inedible. I am on the verge of throwing it away. Extremely sour and I prefer sour over sweet any day! Waste of time and ingredients!
This may be one of the worst things I’ve ever eaten -and I like beets, too. The dressing had a good texture but absolutely no flavor of any kind. It needed tarragon or basil or chives or something. Avoid this.
the second time around I substituded feta cheese and used pastacio nuts this is what it needed!
This was not tasty. Find another beet recipe.
The watercress drizzle makes this dish for sure! Wow! Who thought beets could taste this good! Even my picky dad raved about them.
When I saw Ellie make it, it looked great. I though it was going to taste amazing, what with the buttermilk and the goat cheese, and I really wanted to taste the watercress and the beets because I hadn’t had them in a long time. However, I forgot how bland steamed beets were. The dish looked amazing at first, just like on tv, but when I tasted it it was BLAND, SOUR and AWKWARD TASTING. The fact that it’s extremely healthy does NOT make up for the fact that it tastes bad. There are plenty of GREAT tasting healthy recipes out there that make you feel like a million bucks, but this is not one of them
What a fantastic drizzle. Peppery healthy. It is good on bulgur potatoes. Adds lots of flavor.
This salad takes advantage of great summer time farmer’s market finds– I used baby multi-colored beets that are in season instead of the larger ones used on the show, and was also able to get some fresh watercress. I also used regular goat cheese, as there was a big price difference between that and reduced fat at the store! Great combination of sweet beets, spicy watercress, and meaty walnuts, will definitely use again.
