Yield: 6 servings

Ingredients

  1. 1 (9-ounce) package pie crust mix
  2. 1 large egg
  3. 1 tablespoon cold water
  4. All-purpose flour, for dusting
  5. 1 leftover steak from the Salisbury Steak recipe
  6. 1/4 cup leftover gravy from the Brown Gravy recipe

Instructions

  1. Make the pie crust according to package directions. Wrap in plastic wrap and chill in the refrigerator for 1 hour.
  2. Preheat the oven to 375 degrees F.
  3. In a small bowl mix together the egg with the cold water to create an egg wash. Set aside.
  4. Divide the dough into 6 even pieces, and roll each into a ball. On a floured work surface roll out each piece of dough, with a rolling pin, into 1/4-inch thick rounds about 3 to 4 inches in diameter. Using a small bowl as a template cut around to form perfect circles.
  5. Break the leftover Salisbury Steak into small pieces and add it to a bowl with the leftover Brown Gravy. Stir to combine.
  6. Put a heaping tablespoon of the meat mixture into the middle of each piece of dough. Brush the edges of the circles with egg wash. Fold the dough over the filling to form a half circle. Press the edges together and seal them again with the tines of a fork to make pretty borders. Brush the tops of the empanadas with the egg wash. Arrange the empanadas on a sheet pan and bake until golden brown, about 15 minutes. Remove the empanadas from the oven to a serving platter and serve.

This does not look like empanadas, it looks more like Salisbury steak.

This is an amazing and easy Round 2 Recipe to her recipe titled “Salisbury Steak With Brown Gravy”.    I do prefer my own homemade pie crust, which is quickly made in the food processor.  I also added more mushrooms and gravy to the Salisbury steak recipe (my review is posted there), so I could have a bit more filling (including some extra mushrooms) in these.   This recipe was my first experience making empanadas and we found them wonderful and a bit addictive.  I like to serve this with a side salad.  I have really enjoyed Sandra Lee’s shows and recipes and want to try some more of them that include a “Round 2”.

Haven’t tried it yet but am taking Micheal Simon’s advice on using Sandra’s good technique and adapting it to my own ingredients. Looks like something I can do with my daughter. Will try it today and let you know. Thanks Sandy! I feel validated!!!

It was simple to find recipes before they made the new format. It was probably too simple–now everyone has a cookbook out that they want you to buy.

These empanadas are great – with beef or with pork!

And here is the link to the Salisbury steak – I found it right away – just clicked on Sandra Lee’s name, then entered Salisbury Steak and hit search – and here it is! Enjoy!

On Sandra’s Money Saving Meals Show from Sunday Dec. 27, 2009, where do we find the recipes for the Salisbury Steak and the Carrot Salad?
Chad Rodriguez
Click on “Retro East/Kitchen Classied” – all the receipes are there for the Sunday, 12-27-09. The Trifle and Salisbury Steak and all the rest. Gave this receipe 5 stars because all her receipes are usually very good. Looking forward to making the steak and the trifle.
