Balsamic Berry Bruschetta

Instructions

  1. Thinly slice a baguette; arrange in a single layer on a baking sheet. Brush with softened butter and sprinkle with salt and sugar. Bake at 425 degrees F until lightly golden, about 7 minutes. Let cool slightly.
  2. Toss 1 cup sliced strawberries, 2 tablespoons superfine sugar and 1 tablespoon balsamic vinegar; set aside 30 minutes. Mix 1/2 cup mascarpone cheese, 1/4 cup confectioners’ sugar and a dash of vanilla extract. Spread the mascarpone mixture on the toast rounds; top with the berries and juices.

Delicious! Made this for a party and they were eaten up as soon as I put them down. Definitely wait until the las minute to add the strawberry mixture or they will get soggy.

Fantastic! I made this for a work bake-off and won Grand Prize! The only thing I did different is dice the strawberries like you would tomatoes and added a piece of fresh mint. Delish! This would be great for brunch, dessert or a party!

I made these for a cocktail party and they were excellent! Make sure to only add the balsamic vinegar right before you’re just about ready to serve them. The vinegar breaks down the strawberry, so if not served within 60-90 minutes the strawberry will start to get mushy.

Incredibly good – already made this twice, once as a dessert and the other time just with some white wine on the patio. Definitely wouldn’t cut out the sprinkling of salt as a previous review talked about. This will def be a staple.
