Baked Cheese with Chorizo

Ingredients

  1. Vegetable oil, for oiling the baking dish
  2. 6 ounces chorizo or spicy Italian sausage, casings removed
  3. 1/4 cup chopped onion
  4. 1 large garlic clove, minced
  5. 2 cups grated Oaxaca or mozzarella cheese
  6. 6 flour tortillas, warmed

Instructions

  1. Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  2. In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onion and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  3. Put 1/2 of cheese in the baking dish and sprinkle with 1/2 of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

We loved the flavor but the recipe I used was from the episode of Best Thing I Ever Made called Queso Fundido with Chorizo. It is the exact recipe that is posted here. It really isn’t something you can dip like a cheese dip type thing. I used Italian sausage. The thing that the recipe doesn’t say is to cover it with foil. It was in the video that was posted here but not on the other recipe so that could be why mine came out chunky. I hate it when the recipes don’t match what they do on the show, not everyone gets a chance to watch the show since the cooking shows are on while I am at work and pretty much done when I got home from work.

I made this to go with my home made tortilla chips, plus home made killer salsa. It’s an excellent snack dish. My husband ate half the dish all by himself!
Purchased my chorizo at a Mexican grocery store, It wasn’t greasy after setting it on paper towels while sauteing the garlic and onions.

This recipe is delicious! If you wrap the cooked chorizo in paper towels and press down for a minute, it will help a little with the greasiness. I used Monteray Jack cheese and left out the onions. It was perfect.

I made this and it was DELICIOUS!! I made it for my family the only thing bad was that I didnt make enough and they wanted more so I had to go to the store and buy more chorizo to make more it was sooooo gooooood and easy to make I love it whent the oven does all the cooking.

I had to use the mozzarella cheese because I can’t buy the Mexican cheese called for in Marcella’s recipe. I served this last night to six people along with braised pork soft tacos, chicken fajitas, fish tacos, and pot roast tacos. everything was great but baked cheese with chorizo was the favorite. I make my own chorizo using the recipe from Cocina de la Familia by Marilyn Tausend. I also added some finely chopped red and green bell pepper when I sautéed the onions. That improves a very good recipe.

I really don’t understand why it’s so hard for people to write an intelligent review of a recipe. Why would you make this if you only claimed to “like” chorizo? Also, of course the dip is greasy, it’s full of cheese and sausage. If perhaps you want to lessen the grease, then drain the fat from the chorizo. Let’s use our brains people. There’s no way that anyone can knock this recipe. It’s delicious and not only that, it’s open to interpretation. You can add jalapenos, tomatoes, any veggie and make it your own. This isn’t something that you can indulge in all the time, but it is very delicious! Thanks Marcela.

The cheese was good but the chorizo was overpowering. Ate 1 taco each & threw the rest away. Wouldn’t make again. This is a good dish if you love chorizo, we “like” chorizo so it wasn’t for our family.

Hi Marcela. Just finished preparing this recipe. I liked this dish. Chorizo is one of those sausages that cannot be compared with any other sausage. It is delicious! I love how spicy chorizo is! I like how this dish held its juices. I used Mozzarella cheese and it melted wonderfully. It paired well with the “2007” Merlot I was drinking. Thank you. I will be sure to pass along as a quick one pan dish.
