Ingredients
- 1 cup chopped tomatoes
- 1 cup canned artichoke hearts, quartered
- 5 cups baby arugula
- 2 tablespoons red wine vinegar
- 2 tablespoons store bought pesto sauce
Instructions
- Arrange tomatoes and artichoke hearts over a bed of arugula. Whisk together the vinegar and pesto and drizzle over the salad.

This salad was fantastic. I added some red onion and avocado, as a previous review mentioned. Not to cause trouble, but the 1 person who gave this recipe 3 stars, does not like Arugula. Why would you try an ARUGULA SALAD, if you do not like ARUGULA?????
This is a personal issue but arugala is just too peppery and strong to be eaten alone in a salad, and the amount of dressing didn’t help to cut that flavor at all. I love ellie and her recipes, but this was just not for me. Adding in about half spinach and half arugala tasted much better.

This was a huge hit at the dinner table. The dressing is so easy to make–we didn’t have time to make the pesto and just used Buitoni basil pesto from the supermarket, and it turned out very well. Delicious salad. Love the artichokes!
This salad is fabulous! I used jarred grilled artichokes and the flavor was outstanding. The dressing is so simple and delicious. I’ll definitely experiment with the addition of some protein.

Great quick salad using items easily found in your pantry and refrigerator. I typically use canned artichokes for dip or a chicken/pasta recipe I have. Somehow I wouldn’t have thought to use them in a fresh salad. They were delicious. I also had some homemade pesto in the freezer from last summer’s basil crop. Yummy!
