Turkey Soup with Egg Noodles and Vegetables

Ingredients

  1. 2 teaspoons olive or vegetable oil
  2. 2 leeks, cleaned and chopped
  3. 2 carrots, peeled and chopped
  4. 1 clove garlic, minced
  5. 1 stalk celery, chopped
  6. 3 to 4 cups leftover cooked turkey, shredded or cubed
  7. 2 to 3 bay leaves
  8. 2 teaspoons dried thyme
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon ground black pepper
  11. 8 cups reduced-sodium chicken broth
  12. 6 ounces uncooked egg noodles
  13. 1 cup frozen green peas
  14. 2 tablespoons chopped fresh parsley leaves

Instructions

  1. Heat oil in a large stock pot or Dutch oven over medium heat. Add leeks, carrots, garlic, and celery and saute 4 minutes, until soft. Add turkey, bay leaves, thyme, salt, and black pepper and stir to mix well. Add chicken broth and bring mixture to a boil. Reduce heat to medium-low, partially cover and simmer 10 minutes.
  2. Return mixture to a boil and add egg noodles. Cook 10 minutes, until egg noodles are just tender. Stir in peas and cook until peas are just heated through, about 1 minute.
  3. Remove from heat, discard bay leaves and stir in parsley.

Very tasty. I made it bigger so added another 4 cups of broth, used a rotisserie chicken for the meat. I also could see how one could adjust and add if you wanted to. I wanted to. So once I made it as stated, and it was tasty, I decided to add a few artichoke quarters, and spiked the broth a bit with freshly grated ginger. Wanted a little kick, even though the broth already tasted great. Had a person with a cold in the house and wanted to give an extra snap. Ive also learned over the years to definitely cook the pasta on the side as it just takes all the broth away once it is soaked in. I made the egg noodles on the side, added after into the separate bowls. Im trying to eat less pasta, so made another side pot of barley, so I threw that in my bowl and…Mmmm This was yum!

do i put the uncooked noodles into the boiling broth in step 2? or do i need to precook the noodles before adding them in. the instructions were unclear. Thank you!!!

Simple, easily obtained ingredients. Hardest part was stripping the turhkey of its meat. Very good, hearty soup. Excellent recipe!
