Ingredients

  1. 2 tablespoons olive oil
  2. 1 chopped onion
  3. 2 cloves garlic, sliced
  4. 1/4 teaspoon red pepper flakes
  5. Salt and freshly ground black pepper
  6. 2 cups kale, washed, stems trimmed and chopped
  7. 1 (15- ounce) can cannellini beans, drained
  8. 3/4 cup chicken stock

Instructions

  1. Heat olive oil over medium heat in a large Dutch oven.
  2. Add onion and garlic slices. Saute until tender about 3 minutes. Add the red pepper flakes and salt and pepper; stir until fragrant. Add the kale and let saute until it cooks down slightly. Add the beans and the chicken stock.
  3. Cover and let cook for 10 minutes.

Outstanding!  I usually order this dish at a local Italian restaurant and I crave it. This recipe was even better!  I doubled it in my large dutch oven and added a packed of Trader Joe’s Spicy Italian Chicken Sausage sliced thin for the last ten minutes.  The only problem was that I couldn’t stop eating it!

This is my new favorite thing to make! I loathe kale, but I crave this dish almost every night. Followed the recipe exactly and it is delicious. I have made it 5 times in two weeks. I serve it with salmon and sometimes I sauté ground turkey first and set aside, then add back in for a full and easy meal! Super satisfying, I highly recommend.

In search of recipes to help me and the fam eat more greens decided to try this recipe. I added an additional garlic and use 2 bunches of kale which I sautéed till tender. I liked the taste but felt the beans and kale needed something to bring it together. So I added a tablespoon of butter and voila! Perfection. I did add the red pepper and it was a little spicy. I think I might add paprika next time instead of the red pepper to see how it turns out.
