Watermelon Lemonade

It’s simple to prepare this casserole of overnight eggs benedict in advance for breakfast, a special occasion, or even for house guests.

Ingredients

  1. ½ cup white sugar
  2. ½ cup water
  3. 4 cups cubed watermelon
  4. 3 cups cold water
  5. ½ cup fresh lemon juice
  6. 6 cups ice cubes

Instructions

  1. Place the watermelon into a blender. Cover, and puree until smooth. Strain through a fine mesh sieve.
  2. Bring sugar and 1/2 cup water to a boil in a saucepan over medium-high heat until sugar dissolves, about 5 minutes. Remove from heat. Stir in 3 cups of cold water and the lemon juice. Divide the ice into 12 glasses, and scoop 2 to 3 tablespoons of watermelon puree over the ice, then top with the lemonade. Gently stir before serving.

Insanely good! I think I might get addicted to this. I skipped the part where you heat up the water. I just added the sugar straight to the watermelon and lemon juice mixture, and it dissolved quickly enough.

Easy and very yummy. We used it for Vodka also, or just plain juice. I did not strain it so I could get the full benefit of the pulp. I used a hand mixer

This was not too sweet for my family as some of the reviews have said. I pureed the watermelon until I had 4 cups of watermelon though, so I may have used significantly more than intended which may have cut the sweetness. Its perfect, however, so I’d make it again the same way if and when I do make it again. I did not strain the watermelon.

It is hard to make this if you want to make like a whole gallon of it, because this tells you to put it into individual cups. But other than that it’s great!

I used Meyers lemons and added an extra one. I did strain the melon purée but not sure that is necessary. I mixed altogether and poured over ice . Added mint sprig too. Awesome!

I used sparkling lemon water in place of regular cold water, and served the whole concoction in the hull of the watermelon I used for the drink. It was awesome!

This was tasty and, in my opinion, the recipe has the perfect amount of sugar. I initially cut the sugar b/c of reviewers saying it was too sweet. But that version was not sweet enough, so in the end I added the rest of the sugar.

I loved this recipe soooo much great idea and and very easy but I found that the watermelon sorta over powered it just a little so I added about another lemon in there and it was perfect so good my family and I LOVED this it refreshing and sweet love it!!!

the one change i made which was IMPORTANT, i only added 1/2-3/4 c cold water not the (3) cups suggested. it would have been very diluted. also i offered cold gin or vodka on the side for anyone wanting to spike their beverage. it was really really good!

I had quite a few guests over so I did 1.5X more than the original recipe and decided to use 2 cans of lemonade frozen concentrate and 1 can on limeade frozen concentrate which made it better in my opinion!

I now have CRAVINGS for this, yum!!! Unfortunately the recipe doesn’t make much, so I tripled the recipe this time. Add a little Tajin for a spicy kick!!! A little tedious to juice the lemons; otherwise it’s a simple recipe. LOVE LOVE

We had a mediocre watermelon that no one was eating. We made this drink with it, and also threw in two overripe mangoes. The final result was refreshing and tasty – if we had used a good watermelon, it would have been ever better.
