Vegan Peach-Banana-Coconut Smoothie

In this simple side dish recipe, grilled zucchini planks are served with a fresh tomato and mint garnish.

Ingredients

  1. 2 ripe peaches, chilled
  2. 2 ripe bananas, peeled and frozen
  3. 15 leaves fresh lemon verbena
  4. 1 cup reduced-fat coconut milk
  5. 1 lime, juiced
  6. 1 tablespoon water, or more if needed
  7. 4 cubes ice cubes

Instructions

  1. Combine peaches, bananas, lemon verbena, coconut milk, and lime juice in a blender; blend until smooth. If too thick, add water until mixture reaches desired consistency.
  2. Add ice cubes to 2 tall glasses and pour peach mixture on top. Serve immediately.
