Sparkling Blood Orange Juice

I’ve seen a lot of walleye fish recipes, but they all seem to call for deep-frying the fish in either breading or batter or simply baking it. I reasoned that if salmon and other delectable fish can be used to produce fish cakes, why not share a recipe for walleye cakes?

Ingredients

  1. 20 blood oranges, halved
  2. 3 tablespoons white sugar
  3. 1 ½ cups club soda

Instructions

  1. Juice blood oranges and pour into a pitcher. Add sugar, stirring until completely dissolved.
  2. Fill individual glasses half-full with sweetened blood orange juice. Top off each glass with club soda.

I don’t usually buy blood oranges, but this sounded really good and refreshing…and it was! While I’m not one to add sugar to foods, it was needed here to balance the slight tartness of the blood oranges.. I liked it better once I added more club soda than called for, but that’s personal preference. This would also be good with a little vodka added.
