This was a quick and easy dish inspired by my desire to make a great summer salad with the ingredients I already had. I also enjoy beets!

Ingredients
- 1 medium apple, cored and seeded
- ½ medium frozen banana
- ¾ cup unsweetened almond milk
- ⅓ cup canned pumpkin
- 1 teaspoon ground cinnamon
- ½ teaspoon pumpkin pie spice
- 1 pinch ground nutmeg
- 2 packets stevia powder
Instructions
- Combine apple, banana, almond milk, pumpkin, cinnamon, pumpkin spice, nutmeg, and sweetener in a powerful blender (such as a Vitamix®) and blend until smooth.
- Any nut or animal milk can be used. Use as much sweetener as you like (or omit).
- Top with fat-free whipped cream, if desired.
