Skinny Pumpkin-Apple Pie Smoothie

This was a quick and easy dish inspired by my desire to make a great summer salad with the ingredients I already had. I also enjoy beets!

Ingredients

  1. 1 medium apple, cored and seeded
  2. ½ medium frozen banana
  3. ¾ cup unsweetened almond milk
  4. ⅓ cup canned pumpkin
  5. 1 teaspoon ground cinnamon
  6. ½ teaspoon pumpkin pie spice
  7. 1 pinch ground nutmeg
  8. 2 packets stevia powder

Instructions

  1. Combine apple, banana, almond milk, pumpkin, cinnamon, pumpkin spice, nutmeg, and sweetener in a powerful blender (such as a Vitamix®) and blend until smooth.
  2. Any nut or animal milk can be used. Use as much sweetener as you like (or omit).
  3. Top with fat-free whipped cream, if desired.
