Brunch is a fantastic time to enjoy these easy, sweet mimosas with pineapple juice.

Prep Time: 15 mins
Additional Time: 2 hrs
Total Time: 2 hrs 15 mins
Servings: 12

Ingredients

  1. 4 ½ cups pineapple juice
  2. 1 ⅛ cups orange juice
  3. ⅓ cup lime juice
  4. ¼ fresh pineapple, sliced
  5. ½ blood orange, sliced
  6. ½ lime, sliced
  7. 1 (750 milliliter) bottle Prosecco (Italian sparkling wine)
  8. ¼ cup Campari
  9. 4 slices pineapple and orange slices, for garnish

Instructions

  1. Stir pineapple juice, orange juice, and lime juice together in a large pitcher or punch bowl. Add pineapple, blood orange, and lime slices. Cover and refrigerate for 2 to 24 hours.
  2. To serve, pour 1/2 cup juice mixture into each glass or champagne flute. Add 1/4 cup Prosecco per serving. Slowly drizzle in 1 teaspoon Campari. Garnish each mimosa with a fresh pineapple or orange slice.
  3. For a non-alcoholic version, substitute club soda or citrus-flavored sparkling water for the Prosecco, and use grenadine instead of Campari.

Made this for our New Years Eve celebrations and dipped into it early. Unbelievably delicious! I didn’t change a thing. Found recipe in Allrecipes magazine. I highly recommend subscribing, as it makes a wonderful companion to the website. Hope you enjoy as much as we did!
