With only 3 healthy ingredients, this pineapple juice recipe is a delightful way to start the day. Perfect for people who dislike carrot juice’s too sweet flavor. The lime and pineapple nicely cut the sweetness.

Ingredients

  1. 1 lime, halved
  2. 1 pound carrots, chopped
  3. 2 cups fresh pineapple chunks
  4. ice, as desired

Instructions

  1. Process lime, carrots, and pineapple through a juicer; serve over ice.
  2. Cook’s Notes:
  3. One pound of carrots is about 6 to 7 medium carrots. Once juiced, it makes about 8 ounces of juice.
  4. Two cups of fresh pineapple is about 1/3 of a fresh pineapple and makes about 8 ounces of juice; there is no need to core it.
  5. Use only 1/2 the lime if you prefer the juice less tart; there is no need to peel it.

Soooo good! I was so surprised how sweet this was. My son said it tasted like starburst. It was not overly sweet though. Can not really taste the carrot juice, which I think is a good thing.

3/14/17 Update: I added an apple and it gave it a nice twist. My husband went crazy for it. 4/8/16I love new ideas for my juicer. This is a great combination of flavors that goes perfectly with brunch. Lime and pineapple give the sweet carrot a very unique twist. The pulp makes a great cake! Thank you for the recipe.

This was very good my mom and I had it but my carrots didn’t taste so I added half and half milk, plain milk, and maple syrup I definitely would make this again. And I do recommend this healthy drink.
