A delicious coffee cake made with fresh apricots, cinnamon, and sugar, and that has a lovely tartness to it.

Ingredients
- 2 cups ice, or as needed
- 3 fluid ounces pineapple juice
- 2 fluid ounces silver tequila
- ¾ fluid ounce triple sec
- ¾ fluid ounce freshly squeezed lime juice
- 1 tablespoon coarse salt, or as needed
- 2 lime wedges
- pineapple wedge for garnish (optional)
Instructions
- Fill a cocktail shaker half-full with ice. Add pineapple juice, tequila, triple sec, and lime juice to the shaker. Seal and shake vigorously until outside is frosted, 10 to 15 seconds.
- Sprinkle salt onto a plate. Moisten the rim of a glass with a lime wedge. Press the moistened rim into the salt. Fill glass with ice.
- Strain margarita into the glass and garnish with pineapple and lime wedge, if desired.

The full 2 oz of tequila was enjoyable as a strong drink! It was a breeze to make. I added a splash of agave as it need a little something extra. It did help brighten the flavor. Next time making this drink I’ll substitute gold tequila for silver. I believe it would be a better pairing. Also, a bit of yellow sanding sugar added to the salt rim would be fun and yummy!
Unfortunately as I went to make this I realized we were out of the tequila the recipe called for so I substituted mezcal in. I love the smoky flavor with the sweet pineapple! This was a happy accident for my house and we will be making these on a regular basis. It was a very balanced cocktail and so fun with a side of chips and salsa.
This is a pretty yummy margarita! Perfectly refreshing for a hot day. I love that you don’t have to but anything special, just ingredients that you probably have on hand and will use again. I will definitely be adding this to my cocktail rotation!
