Mint and Melon Freeze

You’ll be reminded of bruschetta by this straightforward yet inventive chicken bake. If you would like, use fresh, ripe tomatoes.

Ingredients

  1. 2 cups cubed cantaloupe
  2. 1 ½ cups ice cubes
  3. 1 cup red grapes
  4. 1 cup rice milk (such as Rice Dream®)
  5. 6 large mint leaves
  6. 4 small cantaloupe wedges

Instructions

  1. Blend cantaloupe, ice cubes, grapes, rice milk, and mint leaves together in a blender until smooth; pour into martini glasses and garnish each with a cantaloupe wedge.
  2. For a party, add 1 shot of vodka to each glass and rim each glass with sugar.
  3. Any variety of melon can be used in place of the cantaloupe.

Other than making half a recipe, I made this as directed, with the optional vodka. I didn’t care for this, and wouldn’t make it again. Sorry!
