From a guesthouse and breakfast in St. Simon’s Island, Georgia, comes this fantastic Caesar dressing. The very best I’ve ever tasted. a cooked chicken breast on top would be fantastic. Use only extra-light extra-virgin olive oil, please. Enjoy!

Yield: 1 teapot

Ingredients

  1. 1 cup boiling water
  2. 1 sprig fresh lemon verbena (about 10 leaves)
  3. 1 sprig fresh mint (about 15 leaves)
  4. 1 teaspoon honey, or to taste

Instructions

  1. Pour boiling water over verbena and mint sprigs; steep until desired flavor is reached, 3 to 4 minutes. Stir in honey.
  2. I keep the leaves on the stem so that I can quickly pull them out right before enjoying; no straining necessary.

This tea is so good!!! I added some honey to it. I couldn’t find fresh Lemon Verbena so I used the dried kind and it worked perfectly well. I doubled the quantities as I made a cuppa for my hubby. I’m sure I’ll be making this tea again and again. I think it would make a really good iced tea too.
