Little muffins with fruit and vegetables for picky toddlers. These have been consumed by my 2-year-old son for one year. He enjoys them most when they are frozen, especially when new teeth are erupting, so I always keep a supply in the fridge! Even adults adore them. wonderful for play groups! Recipe yields 12 regular-size muffins or 24 mini muffins.

Ingredients
- ½ cup lemon juice
- 15 ½ cups filtered water, divided
- 1 (2 inch) piece fresh ginger, peeled
- 4 teaspoons honey
- 4 quart-size mason jars (optional)
Instructions
- Combine lemon juice, 1/2 cup water, ginger, and honey in a blender; blend for 20 to 30 seconds.
- Strain the mixture evenly into 4 quart-sized mason jars or a 1-gallon pitcher. Top off with remaining water and stir. Place lids on the jars or cover pitcher and store in the refrigerator.

Yes I did I grated ginger boil in water and let cool a bit added honey and lemon and added the tumeric and cayenne pour in my drinking tank and rest I saved for later okay

We added some Calamondin fruit to it instead of lemon and he likes to add vinegar. I don’t like it, but he drinks it everyday for his gout to flush his kidneys.
Loved this water – so refreshing! I prefer a stronger lemon ginger taste so next time I’ll cut back on the amount of water I add. The 15 cups was just a little too much.
