Ingredients

  1. 4 quarts boiling water
  2. 3 cups white sugar, divided
  3. ½ pound ginger root with skin, grated
  4. ½ cup honey
  5. ½ cup lime juice
  6. 1 cup brewer’s yeast

Instructions

  1. Remove 1/2 cup of the boiling water and set aside to cool to lukewarm.
  2. Combine remaining boiling water, 2 cups sugar, ginger, honey, and lime juice in a large plastic container.
  3. Mix 1/2 cup lukewarm water, 1 cup sugar, and yeast together in a separate bowl. Let stand until yeast softens and begins to form a creamy paste, about 5 minutes; stir into ginger mixture. Cover the container and let sit for 3 days.
  4. Skim foam from the top, strain liquid, and pour ginger beer into clean storage containers; chill.

I am making this as I write.I hope it works out well as I love ginger beer. I have put it into the plastic container to brew for a few days now and will update as I go. It did seem like a lot of yeast though! We shall see. I have attached a photo of how it looks on day 1…
