Homemade Tonic Water

The best gin and tonics are created with this homemade tonic syrup. Use two ounces of gin and around half an ounce of tonic syrup to make a gin and tonic, and top it off with several ounces of soda water. In a sealable container, syrup can be kept chilled for about a month.

Ingredients

  1. 4 cups water
  2. 3 cups white sugar
  3. 3 limes, zested and juiced
  4. 3 stalks lemon grass, chopped into 1/2-inch pieces
  5. 6 tablespoons citric acid powder
  6. 3 tablespoons powdered cinchona bark

Instructions

  1. Bring water and sugar to a boil in a saucepan, stirring until sugar dissolves.
  2. Reduce heat to low; stir in lime zest, lime juice, lemon grass, citric acid, and powdered cinchona bark. Simmer until cinchona is thoroughly dissolved, about 30 minutes.
  3. Remove from heat; let mixture cool, about 15 minutes. Strain through a colander. Run the syrup through coffee filters or cheesecloth to remove sandy bits of bark.

Gin and Tonic is my favorite cocktail! It’s great that you can make your own tonic. I added some madrona bark for the taste.
