Wonderful cranberry upside-down cake; the first time I made it, I neglected to add the egg whites, but it still turned out well. but with egg whites, it was much better. I received this recipe from a friend and kept it for a while before deciding to make it when I noticed a large quantity of fresh cranberries on sale.

Yummy… Though I used a full teaspoon of Stevia rather than a quarter teaspoon.
Mix in 1/2- 2/3 cup of hot water: Cacao powder for a richer taste, tbsp of coconut oil ( sometimes adding a tsp of Ghee) a pinch of salt, a dash of vanilla extract as suggested and bland. Add heated coconut milk or Almond milk. I sometimes use cashew & coconut milk or even coconut powder when traveling. You can add a bit of honey to sweeten to your liking.it comes out thicker, smoother, and creamier.

Stevia measurements differ from brand to brand, so I made mine according to how sweet I like my drinks. This hot chocolate was ok, but it was a little weak. Next time, I will add another teaspoon of the cacao powder to make it “chocolatier.” This is a good base recipe for people to adjust according to their diet, perhaps using almond or soy milk. I did like the flavor the cinnamon gave to it.
