This amazing pineapple rum will transform your favorite rum beverages, or you can simply transform that average bottle of rum into something delectably cool. This dish is quite simple. Rum with an infusion lasts for up to six months.

Ingredients

  1. 1 ripe pineapple – peeled, cored, and cut into chunks
  2. 1 (750 milliliter) bottle gold Barbados rum (such as Mount Gay® or Trader Joe’s® Rum of the Gods)

Instructions

  1. Place pineapple in a large glass container. Pour in rum, covering pineapple completely.
  2. Store container on a cool, dark shelf, stirring and tasting once a day, until rum reaches desired flavor, at least 1 week but preferably 2.
  3. Strain out pineapple before serving.
  4. Save the pineapple to make boozy cupcakes or jam.
