This pancake recipe is simple to remember, thanks to my mother. For our seven-person family, we always increased it.

Ingredients

  1. 2 cups tequila
  2. 2 ounces butterfly pea flowers
  3. coarse salt to taste
  4. ice as needed
  5. 2 ounces butterfly pea flower-infused tequila
  6. 1 ounce fresh lime juice
  7. 1 ounce triple sec
  8. ⅛ teaspoon edible glitter (Optional)
  9. 1 lime wedge

Instructions

  1. Pour 2 cups tequila over 16 butterfly pea flowers (about 2 ounces) in a jar with a lid. Steep 3 hours or up to 1 day in a refrigerator.
  2. Strain out flowers, return tequila to jar, cover, and store in refrigerator. Makes 2 cups.
  3. Salt the rim of a glass. Add ice and 2 ounces (1/4 cup) infused tequila to glass.
  4. In an ice-filled cocktail shaker, add lime juice, triple sec, and edible glitter. Cover and shake until very cold; pour into glass with tequila and watch the color change from blue to violet. Garnish with lime wedge.
  5. Nutrition data for this recipe includes the full amount of infused tequila. The actual amount of infused tequila is 1/4 cup per serving.

Probably should use fresh lime juice. The tequila is very dark blue after 24 hours in the fridge. Adding the triple sec and lime juice with glitter made it purple like the picture. Next time I’ll put it all in the shaker and strain it over ice then add the glitter. Fun to look at.
