It seems like everyone like this recipe for stuffed avocado. I’m hoping it’s passed on. When I cook it with chicken, it’s a main dish that we like. When I exclude the chicken, I offer it as a side dish. Then we’ll serve it with some grilled chicken.

Ingredients
- ¼ cup unsweetened vanilla-flavored almond milk
- ¼ cup unsweetened cold brew coffee
- ½ cup plain or vanilla Greek yogurt (any fat percentage)
- ½ cup rolled oats
- 1 medium peeled and roughly chopped frozen banana
- 2 tablespoons packed light brown sugar
- ¼ teaspoon vanilla extract
- ¼ teaspoon ground cinnamon, plus more for garnish
- 1 pinch kosher salt, or to taste
- 1 cup ice cubes

- Place almond milk, cold brew, yogurt, oats, banana, brown sugar, vanilla, cinnamon, salt, and ice cubes in a blender. Blend until smooth, about 30 seconds. Pour into a glass and garnish with ground cinnamon, if desired.

Very tasty! I blended the raw oats first because I don’t like a lot of texture in my smoothies. And I freeze leftover coffee into ice cubes, so threw a few of those in for extra cold & flavor. Thanks, I’ll make this again!
