When I am hosting a large group of guests or need to bring something to a potluck, I always make this coconut sheet cake. Buttermilk is used in its preparation, which gives the dish its incredibly moist and wonderful texture. Depending on who or what I am preparing it for, I either cut it into tiny square nibbles or chunks the size of a conventional coconut cake.

Ingredients

  1. 1 cup pina colada mix
  2. 1 fluid ounce coffee-flavored liqueur (such as Kahlua®)
  3. 1 fluid ounce vodka
  4. ⅓ banana, mashed
  5. 1 cup ice cubes

Instructions

  1. Place pina colada mix, coffee-flavored liqueur, vodka, banana, and 1/2 cup of ice into a blender. Cover, and puree until smooth. Add ice a little at a time and repeat until drink reaches desired consistency.

Our resort called them Dirty Monkey’s also. I like a less sweet drink, so I cut back on the colada mix and freeze my banana first. It makes it taste like you added ice cream without all the extra calories.

A good drink for dessert 🙂 A way to cut down sweetness for anyone interested is to only use 3/4 cup pina colada mix and 1/4 cup cream or melted vanilla ice cream. It’s takes away some of the bold coconut flavor.

very tasty blend of flavors! really sweet…you could use 1/2 c pina colada mix and still have a delicious drink.
