Spicy Salsa Mexicana

These oatmeal whoopie pies are filled with a rich vanilla cream and fashioned with delicate oatmeal cookies.

Ingredients

  1. 6 Roma tomatoes
  2. 3 serrano peppers
  3. 2 jalapeno peppers
  4. ¼ white onion
  5. 2 tablespoons fresh cilantro leaves, or to taste
  6. salt to taste

Instructions

  1. Stem tomatoes and peppers. Transfer to a pot of boiling water. Cook, uncovered, for 15 minutes. Carefully drain water and set aside.
  2. Roughly chop onion. Transfer to a blender with boiled vegetables, cilantro, and salt. Blend until smooth or to desired texture.
